Something I forgot in the above: the year of publication is
1994. The place to find the above journal is a large University
library, or a research library thet centers on  nutrition or
food science.

Most university libraries nowadays have their catalogs online,
usually accessible from the University main homepage. I suggest
checking online for availability before visiting the library.
(It may save you an unnecessary trip.)
