This nevertheless the clear explanation to avoid wheat flour and their typical soy souce (that contain wheat as well). This explanations were given both in chinese (my friend is chinese) and in italian. We used to have fish, meat, vegetables all grilled and eventually with addition of potato flour. I am starting to think I should avoid chinese restaurants... Any ideas or where it could be the hidden gluten? thanks to everybody for the suggestions. Best regards
