Chris Minneapolis, MN ------------- I'm not sure this is totally responsive to your post on a book on additives, but a text which has been very educational for me on understanding food is *On Food and Cooking: The Science and Lore of the Kitchen*, by Harold McGee (Publisher: Charles Scribner's Sons, New York; ISBN 0-684-18132-0). It is copyrighted 1984, but does have a chapter on food additives.
