Hi all - I got two responses to my question about food additive books.
Thanks to those who responded!

I'm not sure this is totally responsive to your post on a book on
additives, but a text which has been very educational for me on
understanding food is *On Food and Cooking: The Science and Lore of the
Kitchen*, by Harold McGee (Publisher: Charles Scribner's Sons, New York;
ISBN 0-684-18132-0). It is copyrighted 1984, but does have a chapter on
food additives.  Hope this helps.

this is a place to look for free:

   Linkname: Ingredients and their uses
   Filename: http://www.kashrus.org/kosher/chem.html

they are very concerned about the possibility of grains and milk because
of the Kosher dietary laws.
