Well--- I think Better Hagman explains it well in her book Gf Gourmet
cooks fast & healthy.
She went to the doctor, who said he had good & bad news----
the good news- the intestine was healing & absorbing
the bad news- the cholesterol level was *through the roof*

The gluten free diet (rice & corn based grains) are much higher in
calories & carbohydrates. Your body turns all carbs into sugar.
Compare GF bread from the store nutritional values to that of say--whole
wheat bread- the calories & carbs can be more than double per slice.

Other things like Sweet Rice flour (from Ener-G foods)
Which touts gluten free, wheat free, dairy free,Very low sodium &
cholesterol free
is a whopping 405 calories per one cup!
90 grams of carbs per one cup
this does not include the eggs, milk, oil, etc you may add to a recipie.

It is unfortunate that Celiacs have a narrow selection of foods, and
speaking for myself- tended to embrace with gusto any safe foods. I
think the solution is watching the quantities.
