Perhaps I am dreaming, but is it possible to make GF chocolate sandwich
cookies at home that are like Oreos? To be worth the effort they must
have the proper textures and tastes: The wafers firm, crisp but crumbly,
flat, smooth and even, very cocoa-y; the filling (or "stuff") meltingly
smooth, white and extremely sweet. Has anyone out there done these?

P.S. I can live without the fancy pattern, as I cannot imagine how that
could be duplicated at home.
