    I have been able to substitute guar gum for xanthan gum.  Actually, I use
 them interchangeably, just depending on which I happen to have at the time.
 Guar gum is usually considerable lower priced than xanthan gum :)
 
    Many celiacs do not tolerate guar gum, because it can have a laxative
 effect.  I guess I am lucky, because it does not seem to bother me.  I do not
 use it when I cook food for others in my group, but I do use it for myself and
 my family without any negative side effects.
