Christine E Dropik asked about g-f lasagna noodles.  I use several layers of
rice paper in each layer of lasagna.  There's no need even to soften it
first, just lay out the dry rice paper and plop the next layer on top.  Add
a bit of liquid to the pan, cover tightly, and bake for 1 hour.  It's easy
and very good.  The rice paper has hardly any flavor; it has a slightly
chewy texture, and works perfectly for this purpose.  You can even use up
all those small broken bits.  You can buy rice paper in rounds or triangles
in Asian food markets or even in large supermarkets, at least in around the
west coast.
