Two questions then for the experts: 1.) How much gluten (gliadin?) per day in a normal diet? 2.) What's the smallest amount of gluten (gliadin?) intake that's been measured to have an effect - either biopsy or antibody? Even a very approximate estimate on both these numbers would be very useful. Lots of us are ruling out commercial food choices because of an obsession with a non-existent "zero level". Given that the long term risk of a gluten induced cancer on a normal diet is an extra 100% or so (am I current?) of the normal risk, I'd be more than willing to cut my gluten intake by 50 or so and feel perfectly safe. Hence I would and have eaten Nutty Rice. If I then found that the shorter term effects (either immediate GI distress --not my problem-- or nutritional deficiency were still a problem, there's plenty of time to safely cut back.
