Caramel Corn


1/2 popcorn popped (I use an air popper)
1 cup pecans 
1 cup packed brown sugar
1/2 cup Karo syrup
1 stick butter
1 tsp. vanilla
1/2 tsp. baking soda

Preheat oven to 250.  Pop popcorn and put in oiled roasting pan and place 
in oven to keep warm.  In heavy 2-qt. saucepan stir sugar, Karo, and butter.  
Stirring constantly, bring to oil over medium heat.  Without stirring, boil 
5 minutes and remove from heat.  Stir in vanilla and baking soda; pour over 
popcorn mixture, stirring to coat.  Bake for 1 hours, stirring every 15 
minutes.  Cool and break apart.


Note:  If you like it spicy, add 1/2 tsp cayenne with mixture that gets 
cooked
