I wrote IHOP to take issue with the addition of pancake batter to make
there omeletes more fluffy. I also informed them that people with
Celiac disease represent 1 in 150 Americans who will suffer intestinal
damage which can lead to Lymphoma when ingesting wheat, rye or
barley. Pancake batter is not an obvious addition that most people
would connect with omeletes. For this reason, I would requested that
this information be clearly stated on their menus.

Here was their response:

Dear Ms. Frank:

Thank you for taking the time to contact IHOP.  Yes our omelettes do
contain gluten due to the addition of a small amount of pancake batter
which enhances the taste and appearance of the omelettes.  Because
of the efforts of the Celiac community we have become aware of the
challenge this presents to those with gluten intolerance.  We are
currently formulating a plan on how best to inform our guest of this
and other challenges our menu may present to those with special
dietary needs.

We are grateful that you have brought this concern to our attention.
