Even by school age, class parties with a platter of veggies and some ranch dressing for dipping (you could do a green goddess dressing or something, colored with the parsley) were actually far more popular than the platter of cookies and cakes - seriously - even the kids who probably were not raised eating those veggies as snacks were more interested in the carrots and broccoli - they have good instincts! That being said, you could always put some green in cream cheese and put that in celery boats or something gross (the green) like that. I for one would urge you to avoid the artificial colors though (I used to make green decorative sugar by mixing spinach juice in with sugar - it did make pretty cookie decoration) - see www.feingold.org if you need any convincing that that stuff is poison (some of it can even be used as pesticide! and it definitely makes some kids hyperactive/ADD/ADHD).
