<<Disclaimer: Verify this information before applying it to your situation.>> Hi all, Sorry it took me so long to do this summary, but I wanted to wait until we went. First of all I want to thank everyone who responded with information. It was truly helpful. I called ahead to speak with the chefs of the places that we would be dining at. I will say that we had reservations for 2 different places and ended up not going to those. One reservation was late afternoon (4:00) and no one was really hungry so we just skipped it. We made last minute reservations at a later time, different place and it turned out fine. The chef comes out to your table and they are really great. The 1st place we ate at was The Captains Tavern in the Caribbean resort. It was very good. This is the one place that I called prior to going and we actually ate at. The chef told me what he could do after I told him our restrictions. We (my son and I) had GF pasta in a red sauce with fresh vegetables, mine had shrimp in it and it was fantastic. He also made us GF rolls. I had fresh fruit cup for dessert. Chef Eugene was the person I had. We also ate at Ohana's in the Polynesian resort. This was a last minute decision and I did not know it was buffet style. They just bring the food to your table, it is a set menu, you don't order. Anyway, I asked for the chef and they sent out Chef Bubba. I highly recommend him and this restaurant! Although I could not do any of their sauces etc. due to other allergies he made us up a HUGE plate of Mahi Mahi, shrimp and filet mignon. We also got a HUGE plate of steamed broccoli, asparagus and green beans. They bring out fresh pineapple after the meal. This is a fun place for kids too if they like polynesian food. Chef Bubba was very very nice and he also runs Kona Cafe restaurant next door. He said he could do whatever at either place. The last place we ate at was The Coral Reef in Epcot's living seas. This was also a last minute reservation. It was a very good meal, but I do not think the staff here were nearly as friendly. It took forever to get the chef to come out. He was nice, but not overly friendly (like Bubba). Still a good meal. To get information on the food in the parks I found it was easiest to call the main # and ask to be connected to each parks food and beverage office. The individual stands aren't much help. A lot of wasted time. The main # is 407-824-2222. As far as the food in the parks, I only spoke with one really knowledgeable person before going. He is at the food and beverage office in Animal kingdom and his 4 year old son is gluten free and dairy free. So he really understood my questions. His name is Robert Adams and he was very nice. The foods I am going to list here are also soy free so you may have other options. The Tusker house has a rotisserie chicken with fresh veggies, Restaurantosaurus in Dino land has french fries in dedicated fryers, burgers (100% beef), BBQ rib & fry basket (which he said with notice of day you'll be there they could prepare sauce without soy),= McDonalds fries (in dedicated fryers), Ice cream wagons have juice bars & frozen bananas with chocolate and peanuts, all soft serve ice cream lemon slush drinks, turkey legs and all pop corn. I was told @ MGM that all ice cream has gluten. They said they have Edy's. I did not check this out. Their burgers are 100% beef and fries are o.k. (they are done in soybean oil, so not an option for us). They also listed the itsakadosie (sp?) popcicle. I did not hear back from the other parks, but I know they all serve fries, burgers, popcorn and the turkey legs. Use you own judgment, we did not get sick. Robert Adams also told me of a health food store outside Disney. It is Chamberlain Health foods. I think he said it is in the Crossroads mall near the Disney village. I did not go here so I can not comment. Well, I hope this helps someone. If I forgot anything please e-mail me and I'll try to answer. Thanks again and Happy holidays! Dee
