I was diagnosed w/Celiac 8 years ago.  I recently had a reaction, but
couldn't figure out what was causing it since I had been on a strict
gluten-free diet for the entire 8 years.  Did some research on the net, and
found out some gluten-free foods/drinks were *no longer* gluten-free.  I had
no idea that citric acid, mono and diglycerides, etc. were potential
problems.  If anyone has encountered this surprise reaction, let me know.
Thought I knew, but still learning.
