Why do I seem to have to learn some lessons the hard way? Sunday I went
to a family gathering. I brought GF chicken jambalaya & a veggie/dip
tray. My sister-in-law made a green salad with croutons. I picked out
the croutons & ate a serving. The next morning I awakened depressed,
angry & so darn foggy, I was barely able to function at work. I had to
triple check & recheck everything to make sure I was doing it correctly &
go to my supervisor often to ask the silliest of questions. It was so
embarrassing, not to mention scary since I'm a nurse. My son, who is
also gluten sensitive, skipped the salad & didn't have any reaction at
all. So, Newbies, learn from my mistakes, even a few crumbs of wheat
bread is enough to cause a gluten reaction! Avoid ALL gluten
contamination humanly possible AS IF a molecule were as bad as a pound.
