Jim McDaniels who is in charge of the dietary services for the
Carolinian that runs from Charlotte,NC to New York had lunch with our
Triad Celiac Group. He promised to forward our concerns to the main
office in Chicago and to learn about Celiac Disease. The material
presented by Barbara Jordan at the International Symposium has been
forwarded to the Chicago Office. Plans are in progress to offer a
gluten free menu option by request this spring on Amtrak.

You may want to contact Barbara Jordan at 518-439-3364 to secure the
packet of information that you can share with restaurant managers and
chefs who are interested in learning to have a gluten-free option for
customers.
