doctor's note, but you should be able to get his meals heated.  This way you
can send "leftovers" which is what I ate when I was teaching.  I planned to
cook a little extra for dinner then took my lunch out first and put it in a
microwaveable dish and refrigerated it until the next day.
 
I used to take leftovers, such as pasta dishes to school for lunch, myself.
 However, I just ate them cold (although in South Florida, where I went to
high school) it was rarely actually cold.  I'd also take stews and soups,
yoghurt, fruit, etc.   I wasn't gluten intolerant then, though, so there were
a lot more choices (i.e. wheat dishes, pasta, etc.), but if can either find
or make pasta that works, or even polenta, you could do that.
In college, after I had discovered the intolerances/sensitivities, I came
home every day and cooked myself lunch, then drove back to school for my
afternoon classes.
