Thanks for the many replies.  I can't say that I have an answer to why I
reacted to the Perdue chicken, but I have some possibilities to consider.

First, let me give you information I received from Perdue.  In my
original post I stated "I called Perdue and they assured me that their
whole chickens are gluten free.  Nothing is added.  They are not dipped
in anything, and are not even fed gluten containing foods."  Since then I
have received information in the mail.  I may have misunderstood the
person I spoke to regarding what the chickens are fed.  I don't think she
said that they are not fed gluten containing foods, but the foods she
mentioned to me were not.  However, the booklet I received lists
ingredients they are fed and includes wheat and bakery meal.  It also
states that they are not given hormones and that hormones have not been
allowed in US poultry feed since the 1950's.

I made a second call to Perdue regarding antibiotics.  I was told that
they are not given to all chickens, only if a flock has a problem, and
then the chickens are not killed until the antibiotics are out of their
systems.  Penicillin is not used.

As for your responses, the possibilities include:
crock pot or utensil contamination
chickens fed gluten
antibiotics
food poisoning
chicken allergy (6 people)
MSG or some other additive
some other food allergy
had a bug

Suggestions:
free range chicken
Tyson (one person has no problem with Tyson and one person mentioned
   trouble with Perdue & Tyson)
Empire Kosher (no antibiotics or hormones)
Bell
Evans

One person had an extreme DH reaction to Perdue.  I found it interesting
that 3 non-celiac friends of mine said they have had trouble with chicken
causing gas, brick in the stomach feeling, or spastic colon.

After not eating chicken again for a couple of weeks, I tried it
yesterday.  I had the same meal in the same crockpot, but used a
different brand of chicken.  I had some gas, but nothing compared to the
previous reaction.
