Thanks to all for the well wishes on our trip.  Here is the summary:

Las Vegas:  no challenge. Just don't try to eat too cheap or on buffets.

Flagstaff: good gluten free pizza (Picasso's), good health food store

Grand Canyon:  
-The dining facilities in Grand Canyon are overloaded. We brought our own food.
-The lodge at the North Rim has a GF menu.  
-Mazwik Lodge in the park (Grand Canyon) - cafeteria had GF buns, muffins, bagels,  cookies, (Udi's Products),  and meal choices which included vegetable and salads

Zion 
-may be able to pick your way around in restaurants. There are a couple of stores, but their offerings weren't all that helpful.
-Zion Lodge, the main hotel in the park, has a nice GF selection on the hotel restaurant menu.  
-found an okay Asian restaurant in Springdale

From Page to Flagstaff: only a few trading posts which don't offer much food. 

Sedona:  great gluten free pizza, good health food store.

Kanab, UT:  Rockin V's is great;  Honey's Jubilee is a grocery store with a large GF food section.
*****Several said plan ahead and pack ahead with the expectation of meager offerings. If something fresh and good comes up, it will be a bonus.
