This is what I sent to P.F. Changs  headquarters, today, via their website. Linda 

Sorry to say that unlike my previous communications, this is a complaint not a compliment. I have celiac sprue. I go to P.F. Changs because of the gluten-free menu. (Marlton, NJ). Yesterday, I ordered my usual dishes and they were terribly tasteless, plus one had a deep-fried breading on the shrimp, like a tempura. I questionned this and was assured more than once that it was gf. But when I also said the meal was flat, not spicey, the waiter gladly had the dish replaced with another. Not much better than the first. We paid our bill...didn't ask for comp. But, the waiter did say he asked the manager to come over. We waited 10 minutes (after our bill was paid), and she never showed. While the waiter offered to call out the chef, since we had sent the waiter back at least 3 times to complain about the meal, somehow, I was surprised the chef (head chef, we're told) also never came out. 

My colleagues at work are always surprised that I tell them I like P.F.Changs. Now I know why. Also, while I haven't gotten ill, at this point, since I truely don't believe the crust on the shrimp was gluten-free, and at the waiter's multiple reassurances, I tried one, it remains to be seen (could take days) if I'll escape without a celiac episode. I get painfully ill for weeks. I am terribly disappointed, and somewhat scared. I doubt I'll go back. I must add, that the waiter, Jack, I think, was as nice as could be. It's your head chef and manager who should be ashamed and more responsible.
