"Coping With Celiac, the Great Masquerader" is a new book by Aileen M.
Bennett.  It contains 20 true stories from celiacs all over the world.
The book serves as an educational tool for friends and family, and
helps let celiacs know they are not alone.

Carrageenan:  At a meeting someone asked if carrageenan is
gluten-free.  The answer is YES.  Its sources are seaweed and fresh
moss.  It is used as a substitute for gelatin (as an emulsifier,
stabilizer, and food thickener).  It is Kosher, Pareve without
supervision.<1> It is also an "allowed" ingredient in the Canadian
Pocket Dictionary.
