I am not a baker but I tried Kathleen Estes Muffin recipe (Sept 15) and it was not only yummy but great.If you have not tried to make it as yet ...... give it a try. On the second attempt I substituted chopped walnuts instead of pecans. Cut down the sugar to  1/2 cup and added 1/2 tsp of baking powder. The muffins tasted as great and were gone the same day. My friends could not believe they were gluten free for they tasted So o o Good.The flour I used was Hagman`s 6/2/1 mix.
