I live in San Francisco and often shop at Asian food markets. As with fish
sauces, you need to be very careful when eating or buying rice paper. My
experience has shown that about 50% of the brands contain wheat flour, and
if it says only "flour" in the ingredients it usually means wheat flour.
This includes both Thai and Vietnamese rice papers.
