I received this inquiry from a concerned family member after she received
the following message from a company source. Any comments?? Any of our
grain experts care to help? Is there research to indicate that proteins
are not transferred in the fermentation process? Has anyone else
encountered this issue?

I haven't spoken to this company directly and the product was purchased in
the Corning, NY area. I am looking for scientific foundation for the claim
of this company if any of you can shed some light on this issue.

Thanks.

Sue

This is a response I received from a maker of delicious rice crackers (Blue
Dragon). As I was inhaling them since the package said gluten free, I read
the ingredients and saw soy sauce with wheat powder. Opps. But this is their
response. Ever heard about fermentation being taken out during processing?
