Hi Listmates,

At the risk of beating a dead horse, I'd just like to say that I
sympathize with all of the posters who mourn the loss of gluten-filled
foods in their diets.  I agree that adult-onset makes it a lot tougher.
I'm sure there are lots of great foods out there, containing gluten or
not, that I've never tried and never will.  I don't miss them because
I've never had them.  I'm not sure if the feeling of "loss" truly goes
away either.  I've only been diagnosed for 1 1/2 years, which really
isn't a long time, but it's long enough to know how to play the game
now.  The other night I had to make 4 dinners for my family.  I was in a
rush and didn't want to make 4 dinners.  I could have made 3 and I would
have been okay with that--I have picky children who won't eat what the
grown-ups eat (but that a whole other issue).  But, the 4th dinner was
for me.  I had to make a dinner other than the wheat-based, homemade
pesto pizza that I made for my husband (my daughter won't eat cheese and
my son won't eat pesto).  It smelled sooooooo good and looked great!  I
was truly missing gluten then!  But, I ate my potatoes and tried to
forget about it.

My only point is that this diet really is hard and really does set you
apart from everyone else and limits your choices of food...by a lot!!!
It does stink!  I don't think anyone can say that they love the diet
they're on.  Any diet that limits, due to allergy, weight loss, or
whatever really stinks.  But, at least we have this list for ideas,
help, recipes, and to vent our frustrations over missing out on pesto
pizza.
