Original Post Summary:
GF for 2 years. For the past month, I have been waking up nightly with
severe itching accompanied by skin bumps that look like hives.

Thank you to everyone for all the support and helpful ideas. I had IgE
and IgG blood testing done by Great Lakes. The main offenders are cane
sugar and sunflower seeds, plus many spices. Hope that avoiding these
foods will eliminate the itching.

A dermatologist diagnosed as chronic hives. No cure.

Look into dermatitis herpetiformis (DH).  Celiacs can develop DH even
after going GF because the DH reaction to gluten ingestion can be
delayed for a long time, even years. DH specialist is Dr. John Zone in
Arizona.

Eliminate common offenders: mangos, water melon & all nuts. Could also
be Niacin flush.

Sounds like food allergies. Look into books by Doris Rapp, M.D. Avoid
overloading your system with similar foods. Could also
try some probiotics (e.g. live kefir, yogurt, kimchi, sauerkraut) and
minimize refined foods and sugars, emphasizing raw veggies and cooked legumes.

A fairly classic food reaction. Most likely these are IgG food allergy
reactions (delayed onset).  An IgG food panel from a lab would be a
good test.

I had something similar last month, except my reaction was from being
out in the sun (even though I had sunscreen on).  It was my face,
neck, and sometimes my arms that wouldn't stop itching.
My dermatologist gave me samples of Eucerin Itch-Relief Moisturizing
Spray, also available at Walgreens.  Only the spray is GF, not the
lotion. It really helped.
