Thanks so much for the travel advice!! Below is a summary of what you all had to say :).

Try going to www.goodhealthpublishing.com for a list of 70+ national/regional
restaurants and their lists of gluten/wheat free items. There's also a
gluten free dining card that can be presented to restaurant personnel to
ease the ordering process.

Disney world and Disneyland both came HIGHLY recommended

very good results on cruises and at Beaches Resorts

Make sure you bring some of your own supplies--I would suggest peanut butter, jelly, rice cakes--tuna in a tub. I also like the Whole Foods scones and have had good luck with their lasting. I have traveled and had good experiences--but find that if I find a restaurant in an area that is willing to deal with me, I go back, and back. But, that is OK too. 

My 6 year old son and I both have celiac.  We have gone to Mexico three
times and we absolutely love it.  It is very easy to eat in Mexico I
take my restaurant card in Spanish and use it every time we eat out.
The majority of their food is made from corn and their spices are pure.
When you go to the more expensive restaurants and resorts they try to be
more Americanized and they will have more American food including gluten
items.  We have been to Cancun and the Riveria Maya and we love it.
