Hello everyone -

I am very proud of my sister who has taken an interest in gluten free food
since my diagnosis two years ago. She is a culinary chef and very
interested in having gluten free items on her menu at her restaurant in
Buffalo. However, before she redesigns her menus she needs to find a
distributor that carries bulk gluten free food because of the high cost at
our local supermarket. She needs rice and potato flours along with several
types of gluten free pasta. She is well aware of the problems of
contamination and is looking for a reputable source. Next month she is
giving a cooking demonstration on preparing delicious gluten free gourmet
meals in Buffalo to the local celiac organization. She has also educated
her entire staff on celiac disease and has talk on the radio educating
people about celiac.

It is so wonderful to have a restaurant acknowledge our special diet and
wish more restaurants would follow her lead.

Thank you,

Alison Payne
