A responsible, balanced treatment of the immune system: "Understanding
Allergy, Sensitivity and Immunity, A Comprehensive Guide" by Joneja and
Bielory, a Rutgers paperback, $17 at Barnes and Noble. Gluten sensitivity
is described  as one of three kinds: (intestinal) CD itself (a mix of Type
I, II and IV Types), DH, and an "allergic type" (Type I) involving just
the immediate reactions of diarrhea, vomiting and such. Some may have
combinations of these, I suppose.

There's a whole chapter in the book on the various tests, each designed to
look for different immune cells and antibodies.
