http://tinyurl.com/pocmtsg  Michael Pollan has been widely quoted in the press of late regarding sourdough fermentation breaking down the peptides in gluten that give people trouble. To help nip in the bud the notion that sourdough wheat bread is somehow okay for folks with gluten-related disorders I've publicly posted the test results for two sourdough wheat breads on Gluten Free Watchdog.
