Hi All--

Over the past several months, I've been confronted with ignorance about celiac disease (understandable, though regretable). What has confounded me, and, alas, shocked me, is the blatant ignorance of some (a majority, I fear) that "white bread" does not contain wheat. Case in point - last night, I mentioned to a neighbor that her GI symptoms might be indicative of a wheat intolerance (hate to get into the celiac issue in a brief conversation) and her response was, "I don't eat wheat bread, I eat white bread."

I wish I could say this was the first time someone had insinuated that white bread did not contain wheat, but such is not the case. I wonder how successful we can be in educating the public to celiac disease, explaining what gluten is, when people (granted, not all, but even one is too many), don't have a clue that even white bread is made from wheat flour.

Perhaps someone, though I can't for the life of me think of who, exactly, should start at the most elementary stage to educate the public about what the most basic of foods are made of. Since this was not the first time I'd heard this statement, I feel a profound sense of defeat....
