Following is a recipe I located yesterday for the above.

1 can artichoke hearts
3 Tbsp olive oil
2 Tbsp red wine vinegar (I would use white wine vinegar)
2 cloves garlic, minced
1/4 tsp oregano
1/4 tsp salt
1/3 tsp fresh ground black pepper

Drain artichokes well; combine all other ingredients and refrigerate.
