In Kirsten Klinghammer recently posted recipes for Vienna bread and Rye
bread that called for Tartex Biobin which she calls unroasted carob bean
flour. I believe this ingredient is commonly called Carob Bean Gum or
Locust Bean Gum in the US. Carob bean gum is made from the kernal of the
carob bean. The dark carob flour is made from the hulls. Health food
stores will often order this for you if they do not have it in stock.
