Hi!

Attended a celiac children's picnic today and brought a family favorite side
dish.  It's not so much a children's dish (though my 9-year-old daughter
loves it) but the adults enjoy the very tangy/sweet tastes. Several people
asked for the recipe, so here it is:

Pickly Cukes & Zucchs

In a microwave-safe bowl, combine 3 cups granulated sugar and 1-1/2 cups
apple cider vinegar.  Stir until the sugar is wet and starts to dissolve.
Nuke for about a minute, then stir a long time until the sugar is nearly
invisible.  (Avoid inhaling -- the warm vinegar fumes are rough!)

Add about 1/2 teaspoon mustard seeds and 6 or 8 whole cloves.

Peel 2 cucumbers and slice them very thinly; angle slice two zucchini very
thinly.  (This is also good with red bell peppers and paper-thin sliced white
onions, but I omit them when I make it for my daughter.)  Immerse the veggies
in the syrup, cover, let sit overnight.  Serve cold.
