Dear Listmates,

Here are a couple of Passover recipes using rice. Don't do rice in Passover
- skip this posting. Don't do Passover - read on because this could be
something you might want to do.

1. Chocolate coated puffed rice candies: gently melt dark chocolate - or
milk chocolate if you must - over hot water or in a skillet over very low
heat. Stir in Arrowhead Mills rice puffs, or any other GF brand of puffed
rice. Pour onto parchment paper, and smooth to a 1/2" to 3/4" sheet. When
cool and solid, cut into squarer with a serrated bread knife  Here are some
guideline amounts: 1 cup chocolate chips; 2 cups cereal. You can also
chocolate-coat rice crackers (like Lundbergs's), preferably the salt-free
variety.

2. Rice Matzoth: Trader Joe has a new rice tortilla. Crisp TJ's rice
tortillas at 250 degrees F for 30 minutes either in a conventional or
convection oven right on the rack. Turn off the oven after 30 minutes and
allow the crisp wafers to cool until the oven reaches room temperature. Pack
in a zip lock. Here is a variation, but this is not Matzoth: coat the
tortilla with margarine, butter or oil. Sprinkle cinnamon sugar on the
surface. But bake these in a cookie sheet or your oven will get messy.

I haven't found any of the Matzoth recipes to my liking, so I pretty much
gave up on the stuff until this year. I think the rice Matzoth will do the
trick for me. Of course, if you are looking for Halacha GF Matzoth, then go
to http://www.ubaccess.com/oatbuy.html . If you can't buy oat
Matzothlocally, Karen Beleck under the Maryland location can take your
order. I have never tried this product. The use of oat Matzoth is
controversial, and not all celiacs can tolerate oats.
