Follow up on my original post.

I did indeed get a chance finally to go by Charlie D's Catfish at the Great
Plains Mall in Olathe (BTW they also have one in Bannister Mall and one in
KCK at the Indian Springs Mall).

I spoke to the owner's son who manages the one in Olathe and he told me that
they use separate fryers for the fish and when the oil becomes bad they
throw it out. It is not filtered and then re-used as that would make the
catfish taste bad. Thought about it and it does make sense. Oil that has
had fish cooked in it takes on a yukky taste if used for too long. The guy
was actually shocked that other places would filter and use oil over again.
LOL

You will have to go through the menu carefully to pick your side items, but
they have several that it looks like you could choose from. I had the cole
slaw and green beans. BUT the catfish is what does it for me. It is
breaded only with cornmeal. I have eaten it on three separate occasions
with no reactions.

Charlie D's is a new catfish restaurant in Olathe Kansas located inside the
Great Plains Mall.

My husband just picked some up for me and the owner says the batter is only
cornmeal no wheat. My son just called to be sure and again they stated no
flour just cornmeal
