Pancakes

1 cup GF Flour
1/3 teaspoon xanthum gum
1 egg, beaten
1/2 - 1 cup milk (I use lactose free milk)
1 tablespoon sugar
2 tablespoons melted margarine
1/4 teaspoon salt

In a medium mixing bowl, blend the flour and xanthum gum.  Add the egg and
then beat into the flour mixture, gradually adding the milk.  (I add enough
until I get the consistency I want.)  Add the sugar, butter, baking powder
and salt.  Beat well with a fork.
Pour onto a hot griddle.  I use a Teflon pan with no grease.  Sometimes I
make them small or large, depending on who's eating them.  The kids like
them small.  They keep will in the fridge or freezer and can be toasted or
re-heated in the microwave.
