Celiacs will be able to make safe decisions about maltodextrin as long as
they read the label. It's true that the US Code of Federal Regulations (CFR) says
maltodextrin is made from rice, corn or potato starch and therefore would be
gluten free. But some processors are now using wheat due to a concern about
genetically modified corn. Such use, however, has to be noted on the label as
either "wheat maltodextrin" or "maltodextrin (wheat)." This labeling requirement
applies in the United States but not in Canada.
