Dear Abigail:

I think there was some misunderstanding in your e-mail regarding the use of
Matzo for Passover.  Matzo is the "bread" everyone uses for Passover, not
just children.  In most orthodox homes (the most religious) adults do not
have sweetened matzo.  Just the kids or the elderly are allowed this, for
instance chocolate covered or egg matzo.

The rabbis supervise the making of the matzo and baking of the matzo.  It is
only allowed to bake for a certain amount of minutes to be considered kosher.
There are many laws regarding this.

Some recipes for passover include the ingredients:  potato starch, matzo
meal, cake flour made from matzo meal, and lots of eggs.  The matzo products
along with the eggs make cakes, casseroles, fritters, stuffings, etc.  NONE
OF THESE ARE GLUTEN FREE, BUT ALL ARE KOSHER FOR PASSOVER.

A little history-- "The Festival of Matzot" commemorates the unleavened
bread eaten by the Israelites as they hurriedly fled from Egypt.

Pleases clarify your e-mail to reflect that matzo is used by everyone
during passover.
