All the islands can accommodate your GF diets. The question is on which
islands it is easier. Puerto Rico was okay. A little helped by the Spanish
influence, but predominately American. Hard on St. John, which is very
American style food. Barbados was also hard as the food was very British,
but with no understanding of gluten that you have in the UK. The easiest
(of the four islands I've been to) was St. Lucia. The food was the most
Caribbean, and since the gluten grains don't grow in the Caribbean, their
food is GF as is.

Now on the islands where it was hard, this could be made easier by going
more upscale. But not for lunch in town on St. John. I did finally find
food, but it wasn't easy. (But probably easier if I wasn't also dairy-free.)
