I use a heart rate monitor when using my windtrainer and my heart rates well
exceed the norms for someone my age(64).

Can't speak for runners but haven't had a problem on century rides, assuming
you are strict on your GF diet.

Only bar I have found GF is the Health Valley Rice Bar. Probably not as good
as the others but its the best we have. I have been using Exceed drink for
years and works well. I believe Cytomax may be GF but haven't tried it.

At home its not a problem but away from home it is so I try to bring stuff
with me. I do not do competitions so it is not as much a problem.
