Hi everyone,

I have written before about my 23 year old daughter with celiac who continues to have severe abdominal pain despite being gluten free.  We've found a new MD (gyn/endrocrinology) to treat her hypothyroidism since we can NEVER get her thyroid levels where they need to be, and she has placed her on a strict elimination diet to try to see if she possibly has other food intolerances.  After a weeek of nothing but boiled white rice, and then gradually adding a fruit or veggie every 3 days, we are up to the point where she can eat a vegan diet.

She likes almond milk so we've worked around that obstacle, but her big craving is for CHEESE. We've tried every brand of soy cheese we can find and-YUK.  We had cashew cheese at a local vegan restaurant that was delicious, but I can't find it to purchase anywhere, only recipes to make it.

Anyone else dairy free? Do you know of any good cheese substitutes?  Also, has anyone else had multiple laparoscpic lysis of abdominal/pelvic adhesions?  She has had 3 and it looks like we are headed for another one (she had a ruptured appendix and severe peritonitis for a month in 2001, and as a result has a belly full of adhesions)....
