Hi All~~

I have a neighbor who does nice things for me now and then (shoveling my
snow, sweeping my sidewalk, etc.). He and his wife are diabetic and I want
to bake them some cookies. I was going to bake them peanut butter and
chocolate chip (both can use brown sugar which is most like the coconut
sugar).

My question is this: Is the coconut sugar safe for diabetics (it says it's
low glycemic)? And if so, what should I use for the white sugar in the
recipes? Splenda, or is it safe to use the Splenda-sugar blend? If I use
Splenda, do I use it just like regular sugar?
