Rene, my mother also had severe weight loss, diarrhea, etc. I have 2 ideas
from my struggles:
 
(1) BE HER CATERER: Since she's not leaving the house, take over her
shopping and also meal preparation. This is a lot of work for you and tough
to pull off, since she can either feel deprived and annoyed and reject your
interference and weird foods, or else feel pampered and soothed with GF
foods that seem normal to her (like chicken and RICE soup, IF she likes it).
 
(2) GET THE BLOOD TEST: Enlist her doctor's cooperation. "Doctor says" can
be much more powerful than "daughter says". So get her in for the celiac
blood test (to be sent to a lab that has lots of experience with them --
take your list of labs). Depends-type accident protection can help her
peace of mind when going to the test.
