Several people answered me and said that eating GF in Italy is easier than eating GF here in the United States.  They recommended taking an Italian Restaurant card.  Also they recommended learning to pronounce Sono Celiaco pronounced Chay-lee-ah-oo, and sensa glutine to use when ordering.  
Use online/mobile apps to find places and research what will be close to where you are geographically.  One person recommend Find Me Gluten Free app.  Trip Advisor with the GF filter is helpful. Just make sure dates are recent, 2016-2017.  
Starbene Gold in Florence has a great GF Bakery if you are there.  
GF Food is found in "farmacias" pharmacies.  Most restaurants can substitute Risotto for pasta.  Most restaurants have GF pasta, just make sure they cook it in clean water, not pasta water.  GF items are sometimes marked on the menus.

Most Gelato places have GF cones and will label which flavors are GF.  
Blogger Amy Fothergill <[log in to unmask]> is in Italy right now.  Erin Smith at Gluten-Free Globetrotter sent me Amy's information.  Karin Broussard at GlutenFreeTravelsite.com has a book with GF restaurants listed.  
There is a grocery in the train station in Rome that has GF items.
