The reviews were a bit mixed whether or not dry wall might have a gluten component.  Many people recommended careful label reading of the compounding material as well.
Alot of people nicely (and jokingly) referenced the fact that it wasn't intended for food ;-)  However when the dust is in the air it is not hard to imagine that some areas might get contaminated. 
Face masks were also recommended.
Lastly, I was inquiring because my husband, dx'd celiac, was very ill the first night drywall was begun at our house.
