Crepes

No one will know these are Gluten Free.  They are light, tender and tasty.  Fill them with a savory or sweet filling.  They are worth the effort and can be made ahead and frozen with a sheet of wax paper between each page.

3 eggs

3 Tablespoons milk, soy or almond or rice

2 Tablespoons Ruby Range Baking Mix

Pinch of salt

 

Combine ingredients.  Mix thoroughly.  Batter should be very thin, just thick enough to coat a wooden spoon.

Use 2 to 4 Tablespoons on a hot griddle.

Tip pan to spread batter evenly.

Cook till fully set.  Flip and cook about 30 seconds. Fill with a few spoons full of Chicken Filling.  Makes 5-6.

 

Chicken Filling

2 Red Bird Farm boneless, skinless chicken breasts cooked and cubed

2 Tablespoons butter

2 cloves minced garlic

2 Tablespoons Ruby Range Gluten Free Flour

2 Tablespoons minced green onions

1 cup sliced mushrooms 

1/2 cup fat free chicken broth

Salt and Pepper to taste

1/2 cup grated Swiss cheese

2 Tablespoons white wine

1/2 cup sour cream (can be low fat)

 

Melt butter in a heavy skillet.  Add onions, cook 1 minute.  Add garlic, cook another minute.  Add mushrooms and cook until tender.  Stir in Ruby Range Gluten Free.  Add chicken broth and  wine.  Cook until liquids reduced by about 1/2.  Stir in Swiss cheese.  When melted and smooth add salt and pepper to taste and cubed chicken.  Heat until warm then stir in sour cream.

 

Spoon into crepes and roll.  Serve warm
