Last night Nick Malgieri was on Cooking Live on Food network and had two
very good hints concerning baking/

1. to measure out flour, place measruing cup on a piece of waxed paper
or parchment paper and SPOON flour into the cup.  Then, level it off
with the back of a knife.  The amt of flour is signifcantly different
than if you dip the cup into the flour container and then level it off.
This may be why we have been having problelms with cakes.  etc.

2. In passing, while making an oatmeal cookie, he said that ground nuts
can be used in place of the oatmeal.  [a hint-- if you are grinding nuts
in a food processor, make sure you pulse often and add some of the sugar
called for in the recipe to the nuts to keep it from turning to nut
butter instead of ground nuts] Ann
