Any fruit or vegetable puree can substitute for at least some of the
fat in baked goods.  Carrot or squash baby food can be used, as can
apple butter (smoother but stronger flavored than applesauce).  Grated
zucchini or potatoes, pureed onions for savories.  The nice thing about
these are that the natural pectins help keep food moist - not as much
as butter and egg yolks, but better than stuff made with just egg
whites and yogurt.  Prunes are ok in chocolate stuff, but for things
like oatmeal cookies I refer to simmer chopped dates until soft and
then puree.
