Hi Everyone,

I am new on this list. I have a three-year-old son who has not yet been
officially diagnosed as celiac, but he seems to react to wheat, rye, and
barley, so I avoid those grains. He gets a very bad diaper rash and does
not sleep well at all. :-(  First, I want to comment on soy products. I
just reread an old summary post from someone who said most people who
replied who ate soy had reactions to it. I really have to wonder if this
is because the soybeans are genetically modified. I give my son protein
powder made from soy everyday and he does not react at all. But, the
kind that I use (Shaklee) specifically states that the soybeans they use
are not genetically modified. Just something to ponder because I
genuinely think that soy is very good for us and we should eat it, if
possible. There is a lot of research out there to confirm this. Just my
opinion, for whatever it's worth! :-)

Now, I have a question...I need a bread recipe that is not wet. I
currently buy a special bread for my son, but it is expensive and I
would like to make my own. However, I already make bread for my husband
and do not want to be making two different kinds all the time. He is
very picky and wants bread that is dry and fluffy--not wet and dense,
like most gf breads we've had. I have a grain mill that I would like to
use because I think fresh ground flour is better. So, anyone up for my
challenge? :-)   Thanks!
