Gayle,
I certainly can understand you concern about your Mother, its hard when
you're not near, it really is critical that she not get gluten.  I think
I'd have a talk with the dietician at the hospital.  They could give her
boiled eggs, veg, plain meat, baked potatoes, fruit.  Some hospitals are
not educated on the subject which makes it difficult.  Heres an idea -
maybe you could find out if there a celiac group in her area and contact
them see if they would be willing to bring her food to the hospital.
Contact her doctor see if he has any celiac patients that you could
get in touch with. Let us know how you make out.  Janet in Maine
